3 Steps to Unbelievable Beef

Happy July to you!  The month of June flew by and here we are sitting in July.  Hard to believe but we must move on.  Yesterday being Canada Day, there was a lot of hype and action around the city.  We on the other hand took it pretty easy however did attend the fireworks viewing last evening.  Kids seem to enjoy it and all was good.  Holiday around much of Canada today I believe but not for me.  I am playing catch up on a handful of jobs as I disappeared for most of the weekend.

Barbecue season is in full swing and some of the classic barbecue flavors definitely include beef.  Steak, burgers, prime rib – you name it people love it.  Now I will admit, this post is somewhat targeted to beef lovers but a lot of the principle hold true regardless of what you are grilling ( when it comes to meat).

3 Steps to Unbelievable Beef

  1. Leave it Alone – Once you have set the beef on the grill, resist the urge to poke at it, move it around or press it into the grates.  Simply let it cook on one side and then flip it over.  A hint: you will know it is cooked on one side when the meat is no longer sticking to the grill.  Basically, the flesh has received a nice crisp exterior and has let go of it’s grip on the grill
  2. Let it Rest – Do not slice into your meat as soon as it is off the grill.  Cover the meat with a bit of foil to keep it warm and give it 10-15 minutes.  This will allow all the juices to disperse and keep the meat nice and moist and flavorful.
  3. Slice Against the Grain – beef has distinct strands of protein that can be tough to eat.  Break up these strands by cutting through them on a 45 degree angle.

Sauce it Up w/Style

Try something different than a barbecue sauce to atop your masterpiece.  Here is a simple herb sauce that you can drizzle your meat with next time you grill.

Tangy Herb Sauce


  • 1/2 Cup parsley
  • 1/4 Cup cilantro
  • 1/3 Cup olive oil
  • 1/3 Cup red wine vinegar
  • 2 garlic cloves
  • 2 Tsp. Oregano paste
  • 1/8 Tsp. dried chili peppers
  • 1/2 Tsp. salt


  1. In a small food processor, combine all ingredients until a smooth paste forms.
  2. Spoon sauce over meat just prior to serving.
  3. ENJOY!
