Can you believe it? Friday has arrived! I wanted to switch things up a bit and have somewhat of a fun and interactive post today. I want everyone who visits Cooking today to write their favorite way to eat a potato. Even though one of my favorite ways to eat potatoes is in the form of healthy homemade french fries , today I am going to go over my five favorite ways I like to stuff a potato.
So here goes. I will also include a method in which to cook the potato prior to the stuffing process later on. Oh I am excited – I can’t wait. If I could only type faster …
Zesty Note: For the recipes below I did not give measurements as it depends on your liking of the ingredients and the size of the potato. Use you best judgment.
1. Chicken & Broccoli Stuffed Potato
- Diced cooked chicken
- Broccoli pieces ( blanched)
- Sharp Cheddar Cheese
- Salt
- Pepper
- Chives
- Milk
- Butter
2. Bacon & Swiss Stuffed Potato
- Crumbled cooked bacon
- Swiss Cheese
- Salt
- Pepper
- Green Onion
- Sour Cream
- Butter
3. Cinnamon & Brown Sugar Stuffed Potato
- Brown Sugar
- Cinnamon
- Butter
- Nutmeg
4. Spinach, Mushroom & Feta Stuffed Potato
- Sliced mushrooms
- Baby Spinach
- Feta Cheese
- Parmesan Cheese
- Salt
- Pepper
- Basil
5. Spicy Mexican Stuffed Potato
- Ground beef/turkey
- Salsa
- Monterey Jack Cheese
- Sour Cream
- Salt
- Red Pepper Flakes
- Dash of Hot sauce
Method
- Wash potatoes; dry; rub with oil; prick skins. Bake at 400 degrees for 1 hour or until done.
- Prepare your filling in a separate bowl.
- Cut 1/4-inch slice off top of baked potatoes and scoop out pulp, leaving shells intact about 1/4 inch thick. Mash pulp and add your desired filling.
- Beat well and re-stuff potatoes.
- If serving potatoes right away i like to brush them with a little butter and slide them under the broiler for a minute to brown the tops (depending on the filling).
Zesty Tip: Never bake a potato in tin foil or in the microwave. When you do either of those things it changes the cooking method from “baking” to steaming and prevents a crisp skin from forming. Bake a clean potato in the oven at 400 degrees Fahrenheit for about an hour. Poke it with a fork to allow steam to escape, rub with oil, and sprinkle with salt before placing on the oven rack.

Those sound awesome! I’m not a huge fan of regular tatoes, but when I do eat them I usually just put cottage cheese and salsa on top.

They all sound good to me except that cinnamon-sugar one. I just can’t seem to wrap my head around that one!
I don’t know why I never think to stuff potatoes. It’s such a good idea for dinner.

Well, not the healthiest, but I’ve made french fries and after I baked them (healthy, right?) I put bacon bits and shredded cheese and put them under the broiler and served them with horseradish sour cream. Um, the sour cream was fat free, so that helped! Yum.
Okay, now my mouth is watering!

I love potatoes – I am originally from Idaho. One of my very favorites is a baked potato with butter, sour cream, sauteed onions and mushrooms then topped with French’s crispy onions. It’s to die for!

Certainly my favorites are the # 3 sweetness!! and # 5 Mex style!! they’re great recipes and it’s possible to interchange some ingredients between them…a spicy touch for the 3 would work wonderful as well

That potato looks sooooo good. I love it with broccoli and cheddar cheese although I don’t have them enough. But I do admit that I always microwave them and we love ‘em. We just don’t have time to bake a potato for one hour. Plus, I got really good at doing it in the nuke that it never shrivels up.

I was surprised to learn that the stuffed potato is huge where we live in Brazil. I like one that has arugula, sun-dried tomatoes, and cheese. My husband likes one topped with chicken stroganoff and batata palhas (potato sticks). Sounds good about now!

When I was a kid I always ate a baked potato (baked in tin foil of course) and topped with a scoop of cottage cheese.
I know it sounds awful, but I still love it today!
It’s healthy and I swear, delicious.
My husband thinks it’s disgusting.

Those are some great ways, by my favorite is with salt, pepper and ketchup. However, a cheddar, chive and sour cream one ain’t too bad either.
But sweet potatoes are a different deal, I prefer them over regular potatoes, and top those with either peanut butter, cream cheese or a combination of both.

I make it a meal. I put taco meat, shredded cheese, sour cream, salsa, onion, black olives, butter, and broccoli on it. They are delicious

My wife and I love mixing in broccoli, minced garlic, butter, sour cream, carmelized onions, med. cheddar cheese, then topping with Alfredo sauce!
I liked the idea of the bacon one but didn’t have all the ingredients. Using what I had at I ended up using: bacon, mozzarella cheese, onion, garlic, yoghurt, garlic chives, salt and pepper. A very fresh taste.
I like to boil the large potatoes for about 5 mins before I put them in the oven to cook. When when I scoop out the potato to mash, it seems creamier. Sometimes I add some curry or savoury mince and veg (ground beef) into the scooped out potatoes then top with the mash and sprinkle with cheese and season to taste. My hubby loves potatoes anyway they are cooked, so I am always looking for new ideas. This seems to be a wonderful site to get inspired! Happy cooking everyone.
