Baked Potato Wedges with Thyme!

We made it!  Finally, Friday is here.  I wanted to wind down the week with one of my favorite comfort foods – potatoes.  Potatoes are easy to make, versatile, easy to season and accepts flavors well.

For me, potato wedges must have some crunch and a whole lot of flavor.  I really work hard on making sure they get golden brown and cook evenly.  Nothing worse then getting a good bite of potato and then a partially raw bite.  We have all been there.

These little wonders are super easy to make and if you are on a budget you can really stretch your dollar with this recipe.


  • 3 Medium-Large Baking Potatoes
  • 1 Tbsp. Dried Thyme
  • 2 Tbsp. Olive Oil
  • Salt
  • Pepper


  1. Preheat the oven to 400 degrees.
  2. Cut the potatoes into even wedges.
  3. Place Potatoes in a bowl and add all other ingredients.

  4. Coat well, line cookie sheet with parchment paper and place in a single layer.
  5. Bake at 400 degrees for 30-45 minutes or until golden brown. (Baking time will depend on the heat of your oven)
  6. ENJOY!

Zesty Tip: When baking potato wedges, it is important not to crowd the cookie sheet and keep it to a single layer.  This will allow even cooking.  Turning often is key despite the fact you will lose heat from your oven when you open it.  Stay close to the oven,  keep an eye on them and get them golden and crispy.

This turned out really well and were very satisfying.  I made two dips to go along with the wedges.  First one was a curry mayonnaise dip and the second one was a sweet chili ranch dip.  I just whipped them up in side dishes however I forgot to take a picture…. slack I know.

Yum! I used to make potatoes just like this, only I would cut mine into little cubes. :) I like ketchup, or no dip at all.

YUM! I am a ketchup girl! Plain and simple. However, that sweet chili ranch dip sounds awesome!

Those look so good! I routinely find baked potatoes on my grocery stores dollar rack – I one time got 15 potatoes for $1!

That week we had baked potato soup, burgers with hand cut fries, chili and cheese smothered baked potatoes, and ham with scalloped potatoes. Yum!

I love homemade potato wedges, thyme and olive oil especially gives it great flavor. Great tip turning the wedges over while baking. I’m guilty of not doing that!

I like to dip them in either a blue cheese or a spicy ranch dressing.

Ah, potatoes. My favorite. Any way I can get them. These would be perfect without any dip. And any dip. Oh yum. I did roast some potatoes a few weeks ago and served them with a garlic aioli. I’ve yet to post those. Have a great weekend!

Awesome, well baked potato wedges are the best! I usually don’t dip them in anything, I like ‘em straight up. Same with fries, too (usually). My girlfriend thinks I’m nuts. Heh.

I have never tried thyme with potatoes…I am so used to using Rosemary with these…I’ll try them out!

Potatoes are great for a budget – I just posted last night how I made a side of mashed potatoes for my husband’s holiday work party and for 5 lbs of white potatoes and some sour cream I paid about $3.50.

I make these very often, they taste far better than ordinary french fries. :P
I prefer using rosemary instead of thyme, but that’s personal flavour. (Once I had Italian herb salt, that was best)
Also I discovered that the potatoes become more crunchy when you add the oil and the ingredients after the potatoes have been in the oven for about 10-15 minutes. But this may be just a feature of my oven.
