We made it! Finally, Friday is here. I wanted to wind down the week with one of my favorite comfort foods – potatoes. Potatoes are easy to make, versatile, easy to season and accepts flavors well.
For me, potato wedges must have some crunch and a whole lot of flavor. I really work hard on making sure they get golden brown and cook evenly. Nothing worse then getting a good bite of potato and then a partially raw bite. We have all been there.
These little wonders are super easy to make and if you are on a budget you can really stretch your dollar with this recipe.
Ingredients
- 3 Medium-Large Baking Potatoes
- 1 Tbsp. Dried Thyme
- 2 Tbsp. Olive Oil
- Salt
- Pepper
Method
- Preheat the oven to 400 degrees.
- Cut the potatoes into even wedges.
- Place Potatoes in a bowl and add all other ingredients.
- Coat well, line cookie sheet with parchment paper and place in a single layer.
- Bake at 400 degrees for 30-45 minutes or until golden brown. (Baking time will depend on the heat of your oven)
- ENJOY!
Zesty Tip: When baking potato wedges, it is important not to crowd the cookie sheet and keep it to a single layer. This will allow even cooking. Turning often is key despite the fact you will lose heat from your oven when you open it. Stay close to the oven, keep an eye on them and get them golden and crispy.
This turned out really well and were very satisfying. I made two dips to go along with the wedges. First one was a curry mayonnaise dip and the second one was a sweet chili ranch dip. I just whipped them up in side dishes however I forgot to take a picture…. slack I know.
Let me know what you like to dip you potato wedges in? I hope you have a great weekend and I’ll see you on Monday.
Along the same lines, here is another post on stuffed baked potatoes.
Take care
zesty

There is nothing better than a well seasoned potato!
Yum! I used to make potatoes just like this, only I would cut mine into little cubes.
I like ketchup, or no dip at all.
DELISH!!
I dip it in either spicy salsa, garlic hummus, or guacamole.
ranch with a lil’ hot sauce
YUM! I am a ketchup girl! Plain and simple. However, that sweet chili ranch dip sounds awesome!
Those look so good! I routinely find baked potatoes on my grocery stores dollar rack – I one time got 15 potatoes for $1!
That week we had baked potato soup, burgers with hand cut fries, chili and cheese smothered baked potatoes, and ham with scalloped potatoes. Yum!
Happy Friday Cooking!
I love homemade potato wedges, thyme and olive oil especially gives it great flavor. Great tip turning the wedges over while baking. I’m guilty of not doing that!
I like to dip them in either a blue cheese or a spicy ranch dressing.
I love eating my wedges with a mix of bbq and ranch dressing.
Those taters look nice and crispy, love your dipping sauces, especially the chili-ranch one, yum!
Looks both delicious and versatile.
In my part of the country they call it “Tater Babies”! HA! Go figure…
Thanks Cooking!

Ah, potatoes. My favorite. Any way I can get them. These would be perfect without any dip. And any dip. Oh yum. I did roast some potatoes a few weeks ago and served them with a garlic aioli. I’ve yet to post those. Have a great weekend!
Those look great! I love potato wedges, and I like them dipped in ranch, or BBQ sauce.
Awesome, well baked potato wedges are the best! I usually don’t dip them in anything, I like ‘em straight up. Same with fries, too (usually). My girlfriend thinks I’m nuts. Heh.
oh man – my mouth is watering…
don’t you find that the evoo burns in this temp. and gives the fries an off kinda flavor?
Love all types of roasted potatoes!
I have never tried thyme with potatoes…I am so used to using Rosemary with these…I’ll try them out!
I dip mine in Chipotle Mayo…LOVE it!
I’m boring, I like my potato wedges plain and simple, no dipping sauces for me!!
Potatoes are great for a budget – I just posted last night how I made a side of mashed potatoes for my husband’s holiday work party and for 5 lbs of white potatoes and some sour cream I paid about $3.50.
Hope you’re having a great weekend Cooking!

Your picture is worth a thousand bites for me!
Those look quite yummy. I love potatoes and don’t understand the no carb folks at all. I’m a catsup girl, althought ranch makes a nice change.
I need those! They look delicious!
I make these very often, they taste far better than ordinary french fries.
I prefer using rosemary instead of thyme, but that’s personal flavour. (Once I had Italian herb salt, that was best)
Also I discovered that the potatoes become more crunchy when you add the oil and the ingredients after the potatoes have been in the oven for about 10-15 minutes. But this may be just a feature of my oven.
Wow..I make these all of the time, and they NEVER look this good…Turning them…Don’t always do it…Will start!
Delicious and with less oil too. Great recipe!
The wedges looks so tempting. I would love to grab a nite right about now.
A man that understands a potato can cook. I think you understand a potato.

One of my biggest pet peeves is soggy potatoes and these look anything but! I’m drooling over here. And I think these would pair well with my ketchup addiction
Love your blog…AND LOVE those potatoes. YUM
I love potatoes! These look especially delish!
The wedges look delicious, I normally make mine a bit spicy and dip it in just plain ketchup
Mmm I love baked potato wedges…especially baked sweet potatoes! I’m going to try seasoning them with thyme, that sounds good and a nice change from the usual black pepper and sea salt!
my mouth waters just by looking at your pics. i just love potato wedges!
Would you be able to post your recipe for the sweet chili ranch dip , I love that dip but cannot find the recipe anywheres
